Don't ever believe that you have to cook a 3 course meal every night to be a good mom or wife. Give yourself a break and use some of these quick meal ideas or as we call them
"GO TO MEALS!":


Camey's Quick Winter Soup
Since it's winter right now, my go-to meal is soup. I dice up any veggies I have on hand and maybe some ham, or a can of black beans, or leftover chicken...add a can of diced tomatoes and some stock or water to cover. Sometimes I'll add a little pasta in the end or lentils. The options are endless!

Quick Chicken and Rice
Take boneless chicken tenderloins and cut them into small pieces. Place them in a glass 9 x 11 dish and mix in 5 cans of Campbell's Golden Mushroom soup and 1/2 can of water. Mix up and place a piece of foil over pan and cook for 45 minutes on about 375. Make some of the boil-n-bag rice and some cresent rolls and a side of veggies. Serve the soup and chicken mix over your rice. Easy and quick! I always have the items in my cabinet and my kids beg for it at least once a week.

Kristin's Quiche
Here is a basic quiche recipe.  Always have a frozen pie crust and eggs.  Then use left-over veggies, bacon, chicken, cheese, or whatever you have on hand and put it in the quiche!

Breakfast Night

Every now and then just make some eggs, pancakes or waffles and enjoy and easy meal that your kids will love. I love it too. :)

Garbage Disposal Night
Some of the best food nights for us is just setting out some left overs or a few box side dishes and let every create their own meal. Easy on mom and ends up cleaning out the fridge. Who knows you may have green bean cassarole with some frozen pizza but veggies and carbs never hurt.

Fend for yourself Night
This is a great idea for folks that have older kids in the house. Just tell everyone to find something they want and can make themselves and enjoy it!

Triscuit Nachos
Set some triscuits on a plate, add cheese and melt in microwave and add any meat of your choice. Fun and healthy.

Make your own pizza
Take a can of biscuits and flatten them individually (you can also use English Muffins), take some spaghetti sauce or pizza sauce and give everyone a choice of meats and cheeses you have in the fridge. Kids love it!

Crescent Sandwiches
Take some crescent rolls and place some spicy mustard, ham, and cheese inside. Then roll them up and cook them according to package directions.
